Stuffed Tomato Eyeballs
- kumato tomatoes (or any small tomato, even cherry)
- sour cream
- black olives (I used nicoise)
This is a very simple recipe. There have been many incarnations online. I decided to go with kumato tomatoes because a) they have a beautiful brown/green/red colour, and b) I wanted them to accompany my chili cups - almost like an all-in-one condiment - and cherry tomatoes would've been too small.
Cut out the tops of the tomatoes. Using a small spoon (a grapefruit spoon works perfectly), remove seeds and juice from the inside of the tomatoes and sprinkle the cavity with salt.
If your tomatoes won't stand up for you, simply slice off a sliver from the bottom (far left image). Don't cut off too much or you'll make a hole in the bottom!
Squeeze a few drops of fresh lime juice onto the tomatoes.
Fill the tomatoes half way with guacamole.
Place cilantro leaves (stems inside, stuck to the guacamole) along the top edge for eyelashes.
Add a small dollop of sour cream to fill the eye in.
Add black olives for pupils.
