Sunday Brings Pumpkin Treats

Up early on this Sunday morning (thanks to change in the clocks and Yetch's inability to turn his alarm off). While making pumpkin pie I saved some of the filling to infuse in milk and make myself a pumpkin latte.

Halloween over? Never. It simply lurks.


Pumpkin Spice Latte
makes 1-2 servings

2 cups milk
2 tablespoons canned pumpkin OR 1 teaspoon of Torani Pumpkin Spice Syrup (your choice)
2 tablespoons sugar or sugar substitute - you can halve this amount
2 tablespoons vanilla extract
1/2 teaspoon pumpkin pie spice
1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if you don't have an espresso machine.)

In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy. If you don't have a blender, don't worry about it - just whisk the mixture really well with a wire whisk.

Pour into a large mug or two mugs. Add the espresso on top.

Optional: Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.

Sounds gooood, will have to try!! If I'm able to find all the ingredients that is;) Not sure if we can find any pumpkin kinda spice or syrup in the grocery stores here.. I know my man has been looking for it, to make pumpkin pai, but with no luck so far. I have a plan B though, thinking we can probably find it online. Like everything else these days:) *Crossing fingers*

Pumpkin spice is basically ginger, clove, nutmeg & cinnamon.

They don't have pumpkin or pumpkin pie filling in a can? I never stopped to think that was a north american thing before. Interesting.

Great, I could try with the spices then!! Mmmm I know. Guess it's just the sad fact of living in Norway, far away from the land of Halloween! My man was just as stumbled as you when he discovered.. I don't think I'm exaggerating, when I'm saying most of his suitcase will be filled up with food, when we head back to the US next spring:) haha
